Raw Peppermint Slice

Man, I am pretty hopeless at food presentation…which is why I teach people about food, not sell it! Haha. Tonight I’m running a workshop at Move Strong Gym all about SUGAR (and carbohydrates…because essentially all carbs are broken down into sugar in the body). I’ll be discussing:

* The dangers (and necessities!) of sugar to your health.
* Reading sugar (and the amounts) on labels.
* High-carbohydrate foods and sugar.
* Healthy sweetener (and grain and liquid) alternatives.
* Demo of how to make a healthy sweet treat + taste testers!

My Raw Peppermint Slice may not look very pretty, but it is SERIOUSLY delicious, and surprisingly fructose-free. Feel free to whip this up at home. I’m sure you’ll make it look more appetising than mine…If you do, post a pic and tag us 😉

RAW PEPPERMINT SLICE

Ingredients

BASE
2 cups almonds
2 tbsp coconut oil
4 tbsp rice malt syrup
4 tsp raw cacao powder
4 tsp tahini paste
pinch pink himalayan salt
1 tsp vanilla extract
¼ cup buckwheat kernels

FILLING
1 cup walnuts
¼ cup xylitol
¼ cup coconut oil
⅔ cup coconut cream
1 tsp vanilla extract
pinch pink himalayan salt
6 drops peppermint essential oil*

CHOCOLATE TOPPING
2 x blocks 90%+ dark chocolate (like Lindt), melted

Method

1. Chuck almonds in a food processor and blend until they turn to flour. Add the remaining BASE ingredients (except the buckwheat) in the and blend until well combined. Stir in the buckwheat kernels. Spread mixture in a slice tin and place in the freezer.

2. Blend all FILLING ingredients until smooth. Pour on top of the base. Place slice tin back in the freezer.

3. Melt chocolate and pour over filling. Freeze slice for 1 hour before eating.

Disclaimer…I lied, sorry. The chocolate I used in this recipe (90% Lindt) does have a teeny bit of sugar – so technically not fructose-free. GASP!!! If you want to make your own chocolate, you can melt together coconut oil, cacao powder and rice-malt syrup.
