Ok, so my foodie-presentation is a little better than last week! Haha. Just whipped up this super fat-bomb-of-a-slice for our Nutrition Workshop tonight at Move Strong Gym. Tonight we’re talking all about FATS!

This workshop is part of our series of weekly workshops in conjunction with our 9-Week Nutrition Competition which is currently underway.

We will look at:

*Good fats vs. bad fats.
*Why you NEED fat.
*What bad fats do to the body.
*Balancing Omega-3’s & Omega-6’s.
*How to cook with fat.
*Fat-fuelling snacks/meals to keep you humming
*Deliciously fatty taste-testers!

If you’re after a treat to keep you energised (without excess carbs!), give this recipe I just created a go. These bars have NO added sweetener (besides the few goji berries sprinkled on top), so don’t expect these bars to taste ‘sweet’. I still think they’re yummy, and good for a snack to keep me going until meal times. If you do want the bars to be more of a sweet treat, you could add a couple of tbsp of rice malt syrup 🙂

Coconut Pepita Bars


1 cup unsweetened flaked coconut (60 g)

1 1/2 cups raw pepita seeds (150 to 160 g)

3/4 cup melted coconut oil (180 ml)

1 tablespoon chia seeds (15 ml)

6 drops orange essential oil

Pinch of sea salt

Optional: cacao nibs and goji berries to sprinkle on the top


Process the pepitas and coconut oil in a food processor until very smooth. Add the coconut flakes, chia seeds and orange essential oil, and pulse a few times.

Pour the batter into slice tin. Sprinkle a pinch of sea salt, cacao nibs and goji berries on top.

Freeze until solid, about 30 minutes.

Cut into small bars. Store in the freezer.
