Update on my elimination diet…All is going well. I’ve had good success reintroducing gluten-free grains back into my diet – YAY! I wasn’t a huge grain eater previously, but I do like a tablespoon or two with some meals, to bump up my carbohydrate intake. With minimal carbs, I can feel very tired and weak, and my blood sugar levels not so happy (this is even when I’m eating enough protein, fat and low-carb veggies – I know this, by tracking).

Adding a small amount of carbs (say, 20g at a meal) certainly makes me feel more balanced. And it is actually very therapeutic if in adrenal fatigue. While you don’t want to eat huge amounts of carbohydrates (especially not in the form of sugar and refined carbs), you do want to make sure you’re getting sufficient amount of carbohydrates so as not to stress your adrenals.

Grateful I have some gluten-free grain options to eat now…sweet potato to bump up my carbs was getting a little bit boring, haha!
