How was the spread at the Mindfulness & Mental Health Event last week?! We had lots of requests for recipes for the raw slices. Here’s the delicious recipe for the Lemon & Macadamia Slice made by Toni from Make It Perfect.
Lemon & Macadamia Slice
12 medjool dates (or 25 pitted dates, soaked in boiling water for 10 minutes then drained)
2 1/2 cups desiccated coconut
1 Tbs almond butter
1 Tbs coconut cream
1 tsp vanilla extract
pinch of salt
2 cups macadamias
1/3 cup maple syrup
zest and juice of 2 lemons
3 Tbs melted coconut oil
1 tsp vanilla
Line square cake tin with baking paper.
Place base ingredients into food processor and blend until the mixture resembles a fine, sticky crumb. Press the mixture firmly into the base of tin.
Place the macadamias into food processor and blend until they form a smooth paste. Add in the remaining ingredients and blend until the mixture is smooth.
Pour the mixture over the base, level the top and place in the fridge or freezer to set.
Cut into squares and keep refrigerated.
