All I can say: simply delish! One last recipe from the Mindfulness & Mental Health Event we presented at last month. This super-charged banana bread was cooked by Toni from Make It Perfect.
400g ripe bananas
1 Tbs honey
2 tsp vanilla extract
1/4 cup coconut oil
1/2 tsp ground cinnamon
2 tsp baking powder
1/2 cup coconut flour
1/4 cup chia seeds
Preheat oven to 150 degrees Celsius. Grease and line loaf tin with baking paper.
Combine banana, dates, oil, cinnamon, vanilla, eggs and baking powder into a blender or food processor and blend until creamy and combined.
Add the coconut flour and chia seeds and mix through.
Rest for 10 minutes to allow the coconut flour and chia seeds to expand.
Spoon batter into the tin. Decorate the top of the bread with flaked coconut and frozen blueberries.
Bake for 50-55 minutes or until a skewer inserted into the centre comes out dry.
Cover the top with foil if over-browning during cooking.
Allow to cool in tin before turning out loaf.
Slice and store in an airtight container in the fridge.
