SALTED TAHINI & NUTMEG FUDGE

These fudgey melt-in-your-fingers beauties are an absolute saviour when I’m going sugar-free. If I feel like a ‘treat’ they hit the spot just right. There is absolutely no sugar or sweetener in this fudge, the only slightly sweet element is the carob powder (I just adore carob!). I’ve tried subbing it with cacao powder, but it is far too bitter without any sweetener,so I’d definitely recommend using carob. Oh, and go crazy with the nutmeg as this will give you the illusion of yummy a ‘sweet treat’!

Ingredients

2 cups tahini
½ cup carob powder
½ cup melted coconut oil
2 tsp vanilla essence
1-3 drops of nutmeg essential oil (or 1 – 3 tsp ground nutmeg)
Pinch of pink himalayan crystal salt

 

Instructions

Line a slice tine with baking paper.

Add all of the ingredients into a bowl or food processor and mix well (start off with just one drop of nutmeg oil and add more if needed). Taste and add more sweetener if needed.

Pour the batter into the tin, sprinkle with coarse salt, then put the pan in the freezer for an hour or until solid.

Remove the fudge and cut into squares. Sprinkle with more coarse himalayan salt on top if desired.

Store in freezer until ready to serve.

NOTE: if you do want to add some natural sweetener to this fudge, you could go with ¼ cup raw honey, or for a fructose-free version, ¼ cup of rice malt syrup.
