Try my very quick and simple Puffed Buckwheat Muesli! I find this muesli very gentle and easy to digest, and it also has a nice balance of macronutrients – carbs, fats, protein – to help keep your blood sugar levels stable and energy balanced.
The recipe below is to serve one, but you can make a big batch of the dry ingredients and store in a container, if that makes things quicker in the morning!
Puffed Buckwheat Muesli
- 20g buckwheat puffs
- 5g pepitas
- 1 tbsp walnuts
- ½ tbsp chia seeds
- 1-2 scoops of NutraOrganics Collagen Powder (or your other fav CLEAN protein powder)
- 1 cup unsweetened almond milk (or your other fav milk)
Place buckwheat, pepitas, walnuts and chia seeds in a bowl.
Mix collagen powder in almond milk in a shaker bottle, and pour onto muesli.
